Ingredients

  • ½ lb shrimp
  • 1 grapefruit or orange (sectioned)
  • 1 avocado
  • 2 cups mixed greens
  • 2 tbsp olive oil
  • 1 tbsp lemon juice

Instructions

  1. Quickly sauté shrimp.
  2. Toss with greens, citrus sections, and avocado.
  3. Whisk olive oil and lemon juice in a bowl together to create a dressing.
  4. Drizzle the dressing on top of the salad just before serving.
