Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 tbsp olive oil
  • Fresh garlic and ginger, minced
  • 2 tbsp Greek yogurt
  • 1 tbsp lime juice
  • 1 tsp honey
  • ½ tsp chili flakes (optional)
  • Pinch of salt
  • Tortillas
  • Cabbage, carrots, and bell pepper (shredded or sliced)
  • Avocado and green onions, sliced
  • Pumpkin seeds or sesame seeds (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté garlic and ginger for 30 seconds, then add shrimp and cook 2–3 minutes per side until pink.
  2. In a small bowl, whisk together the Greek yogurt, lime juice, honey, chili flakes, and salt.
  3. Slightly warm the tortillas. Layer in the cooked shrimp, shredded cabbage, carrots, bell pepper, avocado, and green onions.
  4. Drizzle with the yogurt lime sauce, sprinkle with seeds (if using), and wrap tightly.
