Ingredients

  • 1 cup dried brown lentils
  • 4 cups baby spinach
  • 1 can diced tomatoes
  • 1 tsp cumin
  • 1 tsp lemon juice
  • Low-sodium chicken broth (optional)

Instructions

  1. Simmer lentils, tomatoes , and cumin in water or chicken broth for 20 minutes.
  2. Stir in spinach until wilted.
  3. Add lemon juice right before serving.
