1 cup dried brown lentils
4 cups baby spinach
1 can diced tomatoes
1 tsp cumin
1 tsp lemon juice
Low-sodium chicken broth (optional)
Instructions
Simmer lentils, tomatoes , and cumin in water or chicken broth for 20 minutes.
Stir in spinach until wilted.
Add lemon juice right before serving.
