Ingredients

  • 2 cans chickpeas (rinsed)
  • 1 can low-fat coconut milk
  • 2 tbsp yellow curry powder
  • 1 tsp ginger
  • Fresh spinach

Instructions

  1. Sauté ginger and curry powder in a pot for 1 minute until fragrant.
  2. Pour in coconut milk and chickpeas.
  3. Simmer for 15-20 minutes to thicken.
  4. Stir in spinach at the end until just wilted.
