Ingredients
2 large sweet potatoes (cubed/roasted)
1 bunch kale (massaged with olive oil)
¼ cup pumpkin seeds
2 tbsp tahini
Lemon juice
Instructions
Roast sweet potato cubes at 200°C (400°F) for 25 minutes.
In a bowl, toss massaged kale with roasted potatoes and seeds.
Whisk tahini and lemon juice with a splash of water to make a dressing and drizzle over the top.
