Ingredients

  • 2 large sweet potatoes (cubed/roasted)
  • 1 bunch kale (massaged with olive oil)
  • ¼ cup pumpkin seeds
  • 2 tbsp tahini
  • Lemon juice

Instructions

  1. Roast sweet potato cubes at 200°C (400°F) for 25 minutes.
  2. In a bowl, toss massaged kale with roasted potatoes and seeds.
  3. Whisk tahini and lemon juice with a splash of water to make a dressing and drizzle over the top.
