Ingredients

  • 2–3 cups mixed greens
  • 2–3 cups kale, chopped
  • Red onion, avocado, carrot, radish, and celery (as available)
  • Fresh cilantro, chopped
  • 1 cup Vegenaise (Follow Your Heart brand)
  • ½ cup olive oil
  • ¼ cup fresh lemon juice
  • 3–4 tsp chopped garlic
  • 2 tbsp Worcestershire sauce
  • 1 tbsp sherry vinegar
  • 1–2 tsp Dijon mustard
  • 1–2 tsp fresh ground black pepper
  • Freshly grated parmesan cheese

Instructions

  1. Whisk all dressing ingredients together in a bowl or shake vigorously in a jar until smooth.
  2. Chop your kale, greens, and whatever fresh vegetables you have on hand (onions, carrots, etc.).
  3. Place greens and veggies in a large bowl. Add the desired amount of dressing and toss thoroughly to coat.
  4. Top with a generous amount of fresh parmesan cheese and chopped cilantro if available.
