Ingredients

  • 1 lb chicken breast (cubed)
  • 1 ½ cups brown rice
  • 1 bell pepper
  • 1 tsp turmeric
  • ½ cup peas
  • Fresh cilantro
  • Lime wedges

For the Toppings:

  • 1 cup tomato sauce
  • 8 oz fresh mozzarella cheese, sliced
  • Fresh basil leaves

Instructions

  1. Brown chicken in a deep pan, remove, and set aside.
  2. Sauté peppers, then stir in rice and turmeric.
  3. Add 3 cups of water (or low-sodium broth) and bring to a boil.
  4. Return chicken to the pan, cover, and simmer for 25-30 minutes until rice is fluffy. Stir in peas at the very end.
